Job Summary

Butchers are responsible for receiving, preparing, and cutting meats for the kitchen operation.

Responsibilities and Duties

  • Sharpen and adjust cutting equipment
  • Receive, inspect, and store meat upon delivery
  • Cut, bone, or grind pieces of meat
  • Cut or prepare meats to specification
  • Store meats in refrigerators or freezers at the required temperature
  • Keep inventory of meat
  • Clean equipment and work areas to maintain health and sanitation standards

The butcher position is a pivotal role for the kitchen department. It is a requirement to be proactive, and driven to enable the kitchen to run smoothly and efficiently.

Skills Required

  • 2+ years experience in a direct titled butcher role
  • Excellent time management
  • A proactive attitude
  • Ability to work in a large team is necessary. 
  • Previous Fine Dining Experience and experience in French and Southern American Cuisine.
  • High school diploma or equivalent is required
  • Ability to work in cold refrigerated rooms where meat is stored, and use sharp cutting tools safely.
  • Experience in food safety, and sanitation rules
  • Ability to push/pull/lift of 20+ pounds
